		<description>I make this cut 2 ways. 

First, marinate in 1 cup fish sauce and 1 cup sugar with 2 tbl. of chili garlic paste for 2 hours. This is my Vietnamese tri-tip.

Second, marinate in 1/2 cup sherry wine vinegar, 1 tbl chopped garlic, 1 tbl. salt (or substitute minced anchovies, and 1 tbl smoked spanish paprika. This is my Basque tri-tip.

Traditional Santa Maria style.....Salt, pepper, and garlic for two hours.

Either way, cook slowly on a wood or charcoal fired grill until no more than 125 degrees. Let rest for 15 minutes and then cut across the grain which means run your knife parallel to the long length of the tri-tip.</description>
