Hi
I am not sure if you can help me on this one but I am finding it impossible to find organic or freerange chicken, rabbit etc in Buenos Aires. Most of the organic beef (99% I am reliably informed) goes to the UK (ironic as I am English). I did find a supplier but he has disappeared. Somone told me the galpon at Federico Lacroze station is a possibility. As I say, not sure if you can help me but any comments would be appreciated. Also, the butcher in San Telmo market sells me a delicious cut of beef which he calls rosbif. I wasn’t aware that this was actually a cut. Does it have another name?

Re rosbif:
Was it roasting meat? Most places sell it as rosbif or roast beef(exactly as the english spelling and use). Basically a cut from around the blade area. In the UK you might also know it as both chuck and fore rib.
