		<description>Nice post. I tend to like tenderloins done medium rare, so it surprised me that I like the way my Argentine friends cook meat on their own grills...that salty crunch is what I most like. But I hadn&#039;t thought about how a tougher piece of meat allows you to taste the meat longer. I&#039;m going to be really studying my taste buds at the next asado. 

Oh, and congrats about getting your pictures included in the WSJ article!!</description>

		<description>all meat is meant for barbqing eff that. My wife is colombian (they dont know jack about asados) and she eats her meat well done to the point it is dried up and I cant stand well done without the juices. It&#039;s funny because my experience with colombian asados is wierd, they choose thin cuts of chewy meat that&#039;s been marinated in their own knock off chimichurri. 

 Sidenot: Chinchulin burnt up to a crisp served with lemon deserves a write up.</description>
