The weight will allow the dough to rise just enough to make a dense &quot;miga,&quot; the crust is discarded.
Pullman loaves are not that expensive, but you wont use them that often.
If there is a french baker in town, just ask them to bake one for you for about $8 worth investment.</description>

		<description>I promise to stop posting now but before I do, I just want to point out that pan de miga is the same as the French pain de mie (exact same meaning, too), and you can make it at home, ideally with a pain de mie mould, which has a lid.  (The point of the lid is to avoid a crust.  This bread is, after all, all about the crumb.)

Pepperidge Farm makes a loaf called Very Thin in both white and wheat. Buy it--why not buy 2? I&#039;ve used Oscar Mayer Deli shaved ham and Sargento provolone cheese with a thin scraping of Hellman&#039;s mayo to make the very basic sandwich de miga. I didn&#039;t cut off the crusts. A huge hit at home--my husband and Argentine born son can eat them as fast as I can build them. Have added finely shredded lettuce and thinly sliced roma tomatoes too for a great bite. My next plan is with olives and egg. Fun,easy and really feeds your craving.</description>
